Crumble Cake

A dark chocolate cake base, a moist filling, and a crumb topping. This crumb cake is a vegan version of one of the greatest classics of Czech home baking—with a rich cocoa flavor and a filling made from plant-based “cottage cheese,” which we prepare using tofu and lemon to make it smooth, creamy, and refreshing.

The dough is tender yet crumbly thanks to its coarse texture, which gives the cake its characteristic rustic appearance and flavor. The combination of chocolate batter and a light, creamy layer is not only beautiful to look at, but also perfectly balanced in flavor.
